Ingredients:
● ⅓ cup butter, softened to room temperature
● ¾ cup granulated sugar
● 2 eggs
● 1 & ⅓ cups condensed milk
● ¼ tsp vanilla extract
● ½ cup all purpose flour
● 2 cups Fiesta Desiccated Coconut shreds
Procedure:
● Preheat oven to 350° F
● Line mini macaroon pans with paper cups
● In the bowl of a stand mixer with a paddle attachment, cream together butter and sugar
until light and fluffy.
● Add in eggs one at a time, making sure mixture is well mixed after each addition
● Add in condensed milk and mix
● Mix together flour and Fiesta desiccated coconut shreds and add in to mixture
● Scoop into lined macaroon tin and bake for 15-20 minutes or until skewer comes out
clean.
● Transfer to wire rack and let cool completely.
