Ingredients:

 cup butter, softened to room temperature
â Ÿ cup granulated sugar
â 2 eggs
â 1 & â
 cups condensed milk
â Œ tsp vanilla extract
â œ cup all purpose flour
â 2 cups Fiesta Desiccated Coconut shreds

Procedure:
â Preheat oven to 350° F
â Line mini macaroon pans with paper cups
â In the bowl of a stand mixer with a paddle attachment, cream together butter and sugar
until light and fluffy.
â Add in eggs one at a time, making sure mixture is well mixed after each addition
â Add in condensed milk and mix
â Mix together flour and Fiesta desiccated coconut shreds and add in to mixture
â Scoop into lined macaroon tin and bake for 15-20 minutes or until skewer comes out
clean.
â Transfer to wire rack and let cool completely.
