Miguelitos Ube Halaya Premix is a Philippine dessert made from boiled and mashed purple yam. It is the main base in ube or purple yam flavoured-pastries and ice cream. It can also be incorporated in other desserts such as halo-halo.

Store in a cool dry place (15°C-30°C) away from direct sunlight, high temperature, moisture, foreign odor and other contaminants.
Prepare the aluminum foil pan or Llanera by lightly brushing it with oil then set aside.
In a large saucepan, dissolve 1 pack of Miguelitos Instant Ube Halaya Premix in 1 Liter of water (you can add evaporated milk and/or coconut milk to achieve better taste).
Add ½ cup of sugar and 1/3 cup of softened butter. Mix thoroughly until fully dissolved.
In a medium heat, bring the mixture to simmer while stirring continuously until it thickens, enough to cling to the back of the spoon and pulls slightly from the side of the pan.
Remove from fire and immediately transfer to prepared Aluminum pan or Llanera, then distribute evenly using a spatula. Allow to cool.
To serve, invert Ube Halaya onto a serving plate. Lightly brush the top with coconut oil and garnish with latik, shredded cheese, toasted coconut flakes or sweetened macapuno.
