The SAF Yeast - Instant GOLD Yeast is the world's best-selling instant dry yeast. A professional-grade instant yeast designed to give a strong and steady rise to sweet doughs and breads with high sugar content (sugar level of 10% or more, based on flour weight). It is a perfect partner for bakers who want to improve Filipino favorites such as ensaymada, pandesal, siopao, and doughnuts.
SAF RED instant yeast is specially developed for lean dough or low sugar dough (0 to 10% sugar level based on flour content) such as Baguette, Ciabatta, Whole Grain loaves and other French breads.
SAF BLUE instant yeast is specifically developed for high sugar dough (20% sugar level based on flour content) like roti manis, ensaymada, and sweeter dessert buns.
ADVANTAGES:
â Improves machinability.
â Can be added directly to the flour, with no prior rehydration required.
â More resistant to preservatives (calcium propionate).
â Provides uniform fermentation throughout your baking system.
â Provides tolerance to higher or lower dough temperatures.
â Can reduce mixing time and requires a dose that is three times less than that of compressed yeast.
