Deremen is a type of Filipino rice cake prepared with a type of young glutinous rice that is burned in its husk and pounded, it is cooked with sugar and coconut milk over wok until dry and sticky in consistency.
Inlubi is a special native delicacy here in Pangasinan. It has been a tradition for Pangasinenses to cook this "black rice cake" during Undas or All Saints' Day. This native delicacy usually comes out plenty during this season.
Inlubi is made of "deremen" (a young glutinous rice that is burned in its husk and pounded), coconut milk, and sugar. Some put young coconut strips or lesser yam (togi roots) in it.
