Dried shiitake mushrooms are used in stir-fries, soups, stews, and other dishes.
It has an umami flavor that’s even more intense than when fresh.

In Chinese medicine, shiitake are thought to boost health and longevity, as well as improve circulation. It may protect against cancer and inflammation.
Â
Before using dried shiitake mushrooms in recipes, you need to soak them in hot water for 20 min. with lid cover.
The mushrooms should almost double in size. Drain. Strain the liquid and use in stocks and soups.
Discard the stems – they’re too tough to eat. Slice the mushrooms and add to stir-fries, soups and curries.

To keep it fresh, store in dry cool place. Avoid direct sunlight.
