Accord powder is a food additive mostly used as a tenderising powder for meat dishes. It is a blend of phosphates that is used to bind meat and retain its colour, flavour and moistness. It is commonly used in sausages, meatballs and other meat products. The dosage is 0.3% of the meat weight.
Prague powder #1 used in meat processing. It generates a pinkish shade on the meat and extends its shelf life. It is made mostly of salt. Salt acts as a preservative through a process called osmosis, where the water within a cell is drawn out through the cell walls.
