1. PREPARE A POT OF WATER BRING TO BOIL ON HIGH HEAT.
TIP 1. A KILO OF TAPIOCA PEARL NEEDS 6-8 LITERS OF WATER. PLEASE BASE YOUR REQUIREMENTS WITH THE RATIO OF 1:6
TIP 2. USE A POT WITH A SMALL OPENING DIAMETER WITH TALL BODY, THIS IS TO ENSURE THE TAPIOCA PEARLS WILL HAVE ENOUGH SPACE TO CIRCULATE WHILE BOILING AND AVOIDS STICKING OR BURNING.
2. WHILE BOILING IN HIGH HEAT, ADD TAPIOCA PEARLS. WAIT UNTIL THE WATER COMES TO BOIL AGAIN, THEN SWITCH TO MEDIUM HEAT AND SET THE TIME FOR BOIL.
TIP 1. MAKE SURE TO POUR THE TAPIOCA PEARLS SLOWLY AND GENTLY STIR A FEW TIMES TO AVOID STICLING OR BURNING ON POT
TIP 2. AT NORMAL COOKING STATE, THE TAPIOCA PEARLS SHOULD BE CIRCULATING ALONG WITH THE BOILING CURRENT. IF CIRCULATION DID NOT OCCURED MEANS THE HEAT IS TOO LOW. STIR SLOWLY AND INCREASE HEAT TO BRING CIRCULATION.
3. TURN OFF THE HEAT, COVER THE POT WITH A LID AND SET THE TIME FOR WARM SETTLING. PLEASE REFER TO TIME TABLE.
4. TRANSFER TO A FILTERING BASIN AND QUICKLY RINSE WITH WATER TO COOL IT DOWN AND TO WASH OFF ITS STICKY RESIDUES.
5. LASTLY, ADD SWEETENERS OR HONEY. MIX IT WELL AND LET IT ABSORB FOR 5 MIN, THEN ITS READY TO SERVE.
TIPS: AVOID USING HIGH SWEETNESS LEVEL SWEETENER, THIS MAY INCREASE THE CHANCE TO HARDEN
TIPS: IT IS RECOMMENDED TO STORE THE COOKED TAPIOCA PEARLS UNDER 40 DEGREE CELCIUS. THIS CAN HELP IN MAINTAINING SOFT CHEWY TEXTURE.
