1. Opening the pan (first use or re-maintenance)
Cast iron pans usually have a layer of anti-rust wax when they leave the factory, which needs to be thoroughly cleaned and an oil film formed:
Cleaning: Wash with hot water and detergent, wipe dry and dry over low heat.
Oiling: While the pan is slightly hot, use kitchen paper to dip a small amount of edible oil (lard, linseed oil, rapeseed oil, etc.) and evenly apply it to the inside of the pan, including the edges.
Baking: Heat over low heat until the oil film is carbonized (about 10 minutes), turn off the heat and cool, repeat 2-3 times to form a black and shiny oil film.
Cold pans and cold oil are easy to stick to the pan. First heat the empty pan over medium heat for 1-2 minutes, and water droplets can evaporate quickly (the critical point of the Leidenfrost effect), then turn to medium-low heat and add oil.
Cast iron pans require a small amount of oil to assist in lubrication. When frying meat, wipe off the surface moisture first and use its own fat; frying eggs or starchy foods requires a little more oil.
Control temperature: Avoid high heat and dry burning. Cast iron has strong heat storage and can maintain high temperature with medium or low heat. If the pot is overheated, food will easily burn and stick to the bottom.
3. Cleaning and maintenance
Avoid detergent: Clean with warm water + soft cloth/brown brush. Boil stubborn stains with coarse salt or hot water to soften. If detergent must be used, wipe it dry as soon as possible and apply oil film.
Drying to prevent rust: Dry on low heat after washing, or dry it with residual heat from the stove to avoid residual water stains.
Regularly add oil: Apply a thin layer of oil after use and dry it on low heat for 1-2 minutes to enhance the durability of the oil film. If the pot surface is gray or sticky, you need to reopen the pot.
✖️ Sudden cooling of hot pot: Rinsing with cold water at high temperature will cause deformation or coating shedding.
✖️ Long-term soaking: It is easy to rust and shorten the life of the pot.
✖️ Metal spatula scraping: Use a wooden spatula or silicone spatula to protect the oil film.
