It is a wheat noodle of which the threads are relatively thicker than other varieties. It has a rich and strong chewy texture that is ideal for hot and cold serving noodles soak in a mixture of dashi such as soy sauce, mirin and sugar.
Ideal for cold serving noodles, soaking in a sauce or serving hot in a ramen soup with bouillon and garnishes
For cooking:
Bring water to a boil.
Put soba into the boiling water(1L for 90g of noodles).
As soon as the noodles become soft (approx. 10 minutes), drain well and rinse with cold water.
Put soba on top of a bamboo screen and serve with diluted soba sauce, chopped green onion or grated radish (daikon), and wasabi.
