HOW TO USE THE PASTA MACHINE: >Set the rollers controller at the maximum possible distance. >Let a portion of dough pass through the rollers by turning over the handle. >Before letting the dough sheet pass through the machine,fold it double and flour it slightly. >Pass the dough through the machine for about 6-8 times and fold it double each time.The dough should be enough soft,if he dough sticks to hands,flour it slightly again. >Adjust the rollers of the machine at the minimum distance with the help of the contraller.Once more pass the dough through the rollers but this dont fold it double. >While continuing rolling the dough,each time,scale the spaceetween rollers down at one graduate unit of the controller,so each time,you will receive a thinner and longer dough sheet. >The cough sheet you receive this way is too long to make pasta from it,so cut it in half lenghwise. >Leave the cough sheet rest for 10 minutes then start cutting it is very important to give the dough some rest so that isnt too soft.
